I had never cooked with fennel before so I thought I would give it a try, where have you been all my life.


  • 3 cups of diced fennel
  • lots of butter
  • 1 cup of diced inion
  • 1tablespoon of garlic
  • 2 tablespoon dijon
  • 3 tablespoons of stilton
  • 1 cup of heavy cream
  • 3 cups of shrimp
  • 1 tablespoon of green pepper
  • 1 cup of black thai rice or risotto

Saute fennel and onions until tender, add garlic and simmer. Add the rest of the ingredients except shrimp and cook until combined. Add shrimp and simmer until shrimp warm. Serve on rice.
