COOK the WORLD – Nigeria – Jollof Rice and Suya Chicken


Jollof Rice

2 tablespoons oil

1 medium onion, chopped

1 can diced canned tomatoes

1 1⁄4 cups chicken broth

1 bay leaf

1⁄2 teaspoon ground ginger

1⁄2 teaspoon cinnamon

1⁄2 teaspoon thyme

1⁄2 teaspoon salt

1⁄4 teaspoon ground red pepper

1 1/2 cup basmati or long grain rice

3 tablespoons of butter

Sautee onions in butter until tender. Combine undrained tomatoes, broth, and seasonings. Cover; simmer for 15 minutes.

Add rice, making sure all the rice is covered with liquid.

Cover; simmer for 30 minutes more or until rice is tender.

Remove bay leaf.

Suya Chicken

3 lbs chicken pieces

1 tablespoon peanut butter

½ cup Ginger Powder

¼ cup Chilli Powder

¼ cup Paprika Powder**

¼ cup Onion Powder

¼ cup Garlic Powder

1 table spoon sea salt

1 cup flour

Combine all the ingredients and then toss the chicken in the dry ingredients.

Fry in sunflower oil until crispy in a shallow pan

Serve Suya Chicken on the Jollof Rice and eEnjoy
